Las legumbres son sanas y est\u00e1n deliciosas en ensaladas, \u00bflas hab\u00e9is probado? Garbanzos, habichuelas o jud\u00edas, lentejas&#8230; no hay vegetal que se resista a una fresca combinaci\u00f3n que resulta muy apetecible en verano.<\/p>\n<p><strong>La doctora Pilar Luna, Jefa del Servicio de Nutrici\u00f3n y Diet\u00e9tica del<\/strong> <a href=\"http:\/\/www.hospital-ribera.com\" target=\"_blank\" rel=\"noopener\">Hospital Universitario de La Ribera<\/a>, nos propone una deliciosa receta de elaboraci\u00f3n muy f\u00e1cil: <strong>ensalada de alubias con at\u00fan fresco y vinagreta<\/strong>.<\/p>\n<p><strong>Ingredientes que necesitamos:<\/strong><\/p>\n<ul>\n<li>4 rosas rojas<\/li>\n<li>100 cc de buen vinagre, de manzana<\/li>\n<li>50 cc de aceite\u2028100 gr de at\u00fan fresco<\/li>\n<li>250 gr de alubias blancas ya cocidas<\/li>\n<li>1 cuch. peque\u00f1a de miel<\/li>\n<\/ul>\n<p><strong>Modo de elaboraci\u00f3n<\/strong><\/p>\n<p>Una vez listo todo, lo primero que tienes que hacer es poner el vinagre a calentar. En cuanto comience la ebullici\u00f3n a\u00f1ade la miel y vi\u00e9rtelo sobre los p\u00e9talos de rosas, a los que les habr\u00e1s eliminado la parte amarilla de la hoja. D\u00e9jalo infusionar durante 4 horas. Luego, cuela y a\u00f1ade el aceite y b\u00e1telo bien.<\/p>\n<p>A continuaci\u00f3n pon el lomo de at\u00fan (cortado a tacos tras sazonar), en una sart\u00e9n caliente con 1 cc de aceite y dale unas vueltas a fuego fuerte para sellarlo y retirarlo posteriormente.<\/p>\n<p>Por \u00faltimo, en una ensaladera coloca las alubias blancas, fr\u00edas, y a\u00f1ade el at\u00fan y la vinagreta de rosas (5 cc del ali\u00f1o preparado).<\/p>\n<p><strong>Consejos nutricionales<\/strong><\/p>\n<p>Las legumbres son una gran fuente de propiedades que aportan nutrientes indispensables como las vitaminas, hierro, fibra y prote\u00ednas; no incluyen grasas saturadas y s\u00ed otros minerales como cobre, magnesio, calcio y vitaminas como \u00e1cido f\u00f3lico. La ensalada de alubias, con at\u00fan fresco y vinagreta, es una comida completa. Por eso, para terminar basta con tomar una pieza de fruta.<\/p>\n<p>El valor cal\u00f3rico de este plato es de 425 calor\u00edas. Muy recomendable, seg\u00fan la Dra. Luna, para los diab\u00e9ticos y dislip\u00e9micos, tambi\u00e9n para los ni\u00f1os, pero desaconsejado en hiperuricemias.<\/p>\n<p>Las legumbres son alimentos poco perecederos por lo que puedes preparar m\u00e1s cantidad de ensalada y guardarla en la nevera ya que los tiempos de conservaci\u00f3n son mayores.
