{"id":1518,"date":"2015-04-02T15:02:53","date_gmt":"2015-04-02T15:02:53","guid":{"rendered":"http:\/\/www.blogdesalud.riberasalud.com\/?p=1518"},"modified":"2015-04-02T15:02:53","modified_gmt":"2015-04-02T15:02:53","slug":"guiso-de-cuaresma","status":"publish","type":"post","link":"https:\/\/riberasalud.com\/blog-de-salud\/guiso-de-cuaresma\/","title":{"rendered":"Guiso de Cuaresma"},"content":{"rendered":"<p style=\"text-align: justify;\">Recuperar nuestros platos nutricionales mejora no s\u00f3lo nuestra cultura\u00a0sino tambi\u00e9n nuestra salud.\u00a0Esta receta, t\u00edpica de la comarca de La Ribera, nos la ha facilitado el servicio de Nutrici\u00f3n del Hospital Universitario de La Ribera, transmitida por la abuela de la dietista Nuria Ujaque.\u00a0Es una excelente receta, que ha pasado de generaci\u00f3n en generaci\u00f3n, que sigue las recomendaciones de la dieta mediterr\u00e1nea. Toma nota de los ingredientes y atr\u00e9vete a cocinarla para los tuyos.<\/p>\n<p style=\"text-align: justify;\">Preparaci\u00f3n:<\/p>\n<p style=\"text-align: justify;\">1. Trocear el bacalao y ponerlo en remojo durante 12 horas, renov\u00e1ndole el agua 3-4 veces. Conservarlo\u00a0en nevera.<\/p>\n<p style=\"text-align: justify;\">2. Una vez desalado, se escurre y se pasa por harina. En una sart\u00e9n, calentar el aceite y fre\u00edrlo hasta\u00a0que est\u00e9 dorado. Guardar aparte sobre papel absorbente para eliminar el exceso de aceite.<\/p>\n<p style=\"text-align: justify;\">3. En el mismo aceite, se sofr\u00eden los ajos secos y se pone una cucharada de piment\u00f3n colorado,\u00a0apartando la sart\u00e9n del fuego (para que no se queme y no amargue).<\/p>\n<p style=\"text-align: justify;\">4. En una cazuela, se calientan\u00a02 litros de agua aproximadamente; cuando hierve el agua, se a\u00f1aden las habas, guisantes, ajos tiernos, hinojo y las patatas troceadas. A todo esto se le a\u00f1ade el sofrito de antes y se deja cocer\u00a0durante 30 minutos. Mientras, se baten los huevos y se mezclan con tres cucharadas soperas de harina.<\/p>\n<p style=\"text-align: justify;\">5. Se prepara una sart\u00e9n con aceite de oliva caliente y se van tirando cucharadas soperas de la pasta que se hapreparado con huevo y harina y se har\u00e1n unas tortillitas peque\u00f1as, que se llaman \u00abous crescuts\u00bb.<\/p>\n<p style=\"text-align: justify;\">6.
